Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tbsp cocoa powder
  • 1 tbsp green food coloring
  • 1 tsp vanilla extract
  • Cream cheese frosting (for layering and decorating)

Instructions

  • Preheat & Prepare Pans – Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • Mix Dry Ingredients – In a large bowl, combine flour, sugar, baking soda, baking powder, salt, and cocoa powder.
  • Mix Wet Ingredients – In another bowl, whisk together oil, buttermilk, eggs, food coloring, and vanilla extract until smooth.
  • Combine – Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Bake – Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool – Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  • Frost & Decorate – Once cooled, layer and frost with cream cheese frosting. Decorate with green sprinkles or edible gold for a festive touch.

Notes

  • Food Coloring: While green food coloring works best for St. Patrick’s Day, feel free to swap colors for other holidays or occasions.
  • Make Ahead: Bake the cakes up to 2 days in advance, store them in the fridge, and frost them just before serving.
  • Moisture: Ensure buttermilk is at room temperature for the best texture. Add more oil if you want extra moistness.
  • Frosting Alternatives: If you prefer, swap cream cheese frosting with whipped cream or buttercream.
  • Dairy-Free: Use almond milk with vinega
