Ingredients
1 cup Greek yogurt
1/2 cup almond flour
1/2 cup rolled oats
1/4 cup protein powder
2 large eggs
1/4 cup honey
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a baking pan with parchment paper.
- In a medium-sized mixing bowl, whisk together Greek yogurt and eggs until smooth.
- Stir in honey and vanilla extract until fully combined.
- In a separate bowl, mix almond flour, rolled oats, protein powder, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until everything is combined.
- Slowly pour in milk and mix until the batter is smooth and slightly thick.
- Pour the batter into the prepared pan and smooth it evenly with a spatula. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
Notes
For a fluffier texture, blend the oats into a fine oat flour before adding to the dry ingredients.
