Description

Greek Potato Stew, known as Patates Yahni, is a heartwarming dish that celebrates the richness of Greek flavors. With tender potatoes simmered in a savory tomato sauce, complemented by aromatic herbs and olive oil, this stew is a satisfying and wholesome meal that’s easy to prepare.

Ingredients

  • 8 medium potatoes, peeled and cut into 2.5 cm chunks (approximately 1.5 kg)
  • 1 medium red onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon tomato paste
  • 3 ripe tomatoes, peeled and grated
  • 1/2 cup olive oil
  • 1 tablespoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 23 tablespoons chopped fresh parsley

Instructions

  • Prepare the Ingredients: Peel and cut the potatoes into 2.5 cm chunks. Finely chop the onion and garlic. Peel and grate the tomatoes.
  • Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened. Add the garlic and sauté for an additional minute until fragrant.
  • Add Tomato Paste and Grated Tomatoes: Stir in the tomato paste and cook for 1 minute. Then, add the grated tomatoes, mixing well to combine.
  • Add Potatoes and Seasonings: Add the potato chunks to the pot, seasoning with salt, pepper, and chopped parsley.
  • Simmer: Add enough warm water to cover the potatoes. Bring the stew to a boil, then reduce the heat to medium-low. Cover and simmer for about 30 minutes, or until the potatoes are tender.
  • Serve: Let the stew sit for a few minutes off the heat before serving. Enjoy it warm.

Notes

  • Add Vegetables: Feel free to incorporate other vegetables like carrots or bell peppers for extra flavor and nutrition.
  • Spice It Up: Add a pinch of red pepper flakes or a dash of paprika for a subtle heat.
  • Protein Addition: To make the stew heartier, consider adding cooked chickpeas or lentils for extra protein.
