Greek Potato Stew, known as Patates Yahni, is a heartwarming dish that celebrates the richness of Greek flavors. With tender potatoes simmered in a savory tomato sauce, complemented by aromatic herbs and olive oil, this stew is a satisfying and wholesome meal that’s easy to prepare.
Ingredients
- 8 medium potatoes, peeled and cut into 2.5 cm chunks (approximately 1.5 kg)
- 1 medium red onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 tablespoon tomato paste
- 3 ripe tomatoes, peeled and grated
- 1/2 cup olive oil
- 1 tablespoon salt
- 1/2 teaspoon freshly ground black pepper
- 2–3 tablespoons chopped fresh parsley
Instructions
- Prepare the Ingredients: Peel and cut the potatoes into 2.5 cm chunks. Finely chop the onion and garlic. Peel and grate the tomatoes.
- Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened. Add the garlic and sauté for an additional minute until fragrant.
- Add Tomato Paste and Grated Tomatoes: Stir in the tomato paste and cook for 1 minute. Then, add the grated tomatoes, mixing well to combine.
- Add Potatoes and Seasonings: Add the potato chunks to the pot, seasoning with salt, pepper, and chopped parsley.
- Simmer: Add enough warm water to cover the potatoes. Bring the stew to a boil, then reduce the heat to medium-low. Cover and simmer for about 30 minutes, or until the potatoes are tender.
- Serve: Let the stew sit for a few minutes off the heat before serving. Enjoy it warm.
