Description

Greek Chicken Gyros with Cucumber Tzatziki feature juicy, marinated chicken served with tangy, creamy tzatziki, fresh veggies, and crumbled feta, all wrapped in warm pita for a delicious Mediterranean-inspired meal.


Ingredients

680g skinless chicken thighs or fillets

60ml olive oil

Juice of 1 lemon

3 cloves garlic, minced

2 tsp dried oregano

1 tsp paprika

1/2 tsp ground cumin

Salt and black pepper to taste

250 ml plain Greek yogurt

1/2 cucumber, grated and drained

1 clove garlic, minced

1 tbsp fresh dill, chopped

1 tbsp lemon juice

1 tbsp olive oil

Salt and black pepper to taste

46 pita breads, warmed

1 cup cherry tomatoes, halved

1 cup shredded lettuce

1/2 red onion, thinly sliced

50 g crumbled feta cheese (optional)


Instructions

  1. Marinate the chicken: In a large bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken, ensuring it is well-coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  2. Make the tzatziki: In a separate bowl, mix together Greek yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper. Refrigerate for at least 20 minutes to allow the flavors to meld together.
  3. Cook the chicken: Heat a large skillet or grill over medium-high heat. Cook the marinated chicken for 4-5 minutes per side until golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Let it rest for 5 minutes before cutting into strips.
  4. Assemble the gyros: Spread a generous amount of tzatziki on each warmed pita bread. Top with sliced chicken, cherry tomatoes, shredded lettuce, red onion, and crumbled feta, if desired.
