Description

Glazed Apple Pie Baked Oatmeal is a cozy breakfast that tastes like dessert but is wholesome enough to start the day. With tender apples, warm spices, crunchy pecans, and a sweet cinnamon glaze, it’s hearty, comforting, and easy to prepare in under 30 minutes.


Ingredients

3 large eggs, lightly beaten

1/4 cup Greek yogurt

1 cup milk

1/2 cup coconut sugar (or brown sugar)

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon baking powder

3 cups old-fashioned rolled oats

2 medium apples, peeled, cored, and diced into 1-inch cubes

1/2 cup chopped pecans

1/2 cup powdered sugar

1/4 teaspoon ground cinnamon (for glaze)

12 tablespoons half and half cream (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together eggs, Greek yogurt, milk, coconut sugar, vanilla, cinnamon, nutmeg, allspice, cloves, salt, baking soda, and baking powder until smooth.
  3. Fold in rolled oats, diced apples, and pecans.
  4. Spread mixture evenly into prepared pan and bake for 20–25 minutes, until lightly golden brown.
  5. Allow baked oatmeal to cool slightly before preparing the glaze.
  6. For the glaze, whisk powdered sugar, cinnamon, and cream together until smooth and drizzling consistency is reached.
  7. Drizzle glaze over cooled oatmeal and serve warm.

Notes

Substitute walnuts or almonds for pecans for a different crunch.

Add raisins or dried cranberries for extra sweetness.

For dairy-free, use almond milk and coconut yogurt, and make glaze with coconut cream.

The oatmeal is delicious even without the glaze for a less sweet option.

Can be frozen for up to 2 months, cut into squares, wrapped tightly, and thawed overnight in the fridge.
