4 medium yellow squash, sliced into 1/4-inch rounds
4 cloves garlic, minced

1/4 cup grated Parmesan cheese (optional)
Fresh parsley, chopped for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Squash: In a large bowl, combine the sliced yellow squash, minced garlic, olive oil, dried oregano, smoked paprika, salt, and pepper. Toss everything together until the squash is evenly coated with the mixture.
- Arrange on a Baking Sheet: Spread the coated yellow squash in a single layer on a baking sheet lined with parchment paper for easy cleanup.
- Roast: Roast in the preheated oven for 20-25 minutes or until the squash is tender and starting to brown, flipping halfway through for even cooking.
- Add Parmesan (Optional): If using Parmesan cheese, sprinkle it over the squash during the last 5 minutes of roasting so it can melt and slightly brown.
- Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley before serving.
Notes
You can substitute yellow squash with zucchini or any other squash of your choice.
For a vegan option, omit the Parmesan cheese or use a dairy-free substitute like nutritional yeast.
