Description

Ingredients

4 medium yellow squash, sliced into 1/4-inch rounds

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Squash: In a large bowl, combine the sliced yellow squash, minced garlic, olive oil, dried oregano, smoked paprika, salt, and pepper. Toss everything together until the squash is evenly coated with the mixture.
  3. Arrange on a Baking Sheet: Spread the coated yellow squash in a single layer on a baking sheet lined with parchment paper for easy cleanup.
  4. Roast: Roast in the preheated oven for 20-25 minutes or until the squash is tender and starting to brown, flipping halfway through for even cooking.
  5. Add Parmesan (Optional): If using Parmesan cheese, sprinkle it over the squash during the last 5 minutes of roasting so it can melt and slightly brown.
  6. Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley before serving.

Notes

You can substitute yellow squash with zucchini or any other squash of your choice.

For a vegan option, omit the Parmesan cheese or use a dairy-free substitute like nutritional yeast.

Add red pepper flakes for a spicy kick.
