Description

These Garlic Parmesan Chicken Meatloaves are a delicious, lighter twist on classic meatloaf. Made with ground chicken, Parmesan cheese, garlic, and herbs, these mini meatloaves are tender, flavorful, and perfect for a family dinner. Ready in under an hour, they offer a cheesy finish with optional mozzarella on top.


Ingredients

For the Meatloaves:

1 lb ground chicken

½ cup grated Parmesan cheese

½ cup breadcrumbs

¼ cup finely chopped parsley

3 cloves garlic, minced

1 beaten egg

1 tsp dried oregano

½ tsp salt

¼ tsp black pepper

¼ cup milk

2 tbsp olive oil

Optional Cheese Topping:

¼ cup grated mozzarella cheese (optional)


Instructions

1. Preheat the Oven:
Preheat the oven to 375°F (190°C).

2. Mix the Ingredients:
In a large bowl, combine the ground chicken, Parmesan, breadcrumbs, parsley, garlic, egg, oregano, salt, and pepper. Add the milk and mix until everything is well combined.

3. Shape the Meatloaves:
Divide the mixture into four portions and shape each into a mini loaf. Place them on a baking sheet lined with parchment paper or lightly greased.

4. Add Olive Oil:
Drizzle olive oil over the top of each meatloaf for added moisture and flavor.

5. Bake:
Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) using a meat thermometer.

6. Optional Cheese Topping:
For a cheesy finish, sprinkle grated mozzarella over the top of each meatloaf during the last 5 minutes of baking. Continue baking until the cheese is melted and bubbly.

7. Rest and Serve:
Let the meatloaves rest for a few minutes before serving.


Notes

Variations:

Cheesy Stuffing: Stuff each mini meatloaf with a cube of mozzarella for a gooey surprise inside.

Spicy Kick: Add chili flakes to the mixture for a bit of heat.
