Ingredients
9 ounces peeled garlic cloves
2 sprigs fresh rosemary or thyme (your choice)
0.4 cup olive oil or neutral cooking oil
Instructions
- Preheat the Oven: Set your oven to 250°F (120°C) and allow it to fully preheat.
- Prepare the Garlic: Place the garlic cloves in a heatproof bowl, cover them with boiling water, and let them sit for 5 minutes. Drain the water and remove the skins.
- Combine the Ingredients: Add the peeled garlic cloves and fresh rosemary or thyme sprigs to an ovenproof dish. Pour in enough olive oil or neutral cooking oil to completely submerge the garlic.
- Bake the Confit: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the garlic turns golden and is fork-tender. The oil will become aromatic as the garlic cooks.
- Cool and Store: Allow the confit to cool completely. Once cooled, transfer the garlic and infused oil to a sterilized, airtight jar and refrigerate. The confit will keep for up to two weeks.
Notes
Herb Variations: You can experiment with bay leaves or add a pinch of chili flakes for heat.
Neutral Oil: If you prefer a more neutral taste, you can substitute olive oil with grapeseed or sunflower oil.
Garlic-Free Confit: Adjust the ratio of herbs to garlic for a stronger herbal infusion.
