Ingredients
1 lb ground beef
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 tbsp olive oil
4 large flour tortillas
1/4 cup butter, melted
3 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp onion powder
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper, to taste
Optional: sliced pickles for garnish
Instructions
-
Preheat the Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
-
Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 7–8 minutes. Drain any excess fat if necessary.
-
Season the Beef: Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and pepper. Mix well and remove from heat. Let the beef mixture cool slightly.
-
Prepare the Garlic Butter: In a small bowl, combine the melted butter with minced garlic. Stir well and set aside.
-
Assemble the Rollups: Lay the tortillas flat on a clean surface. Evenly distribute the beef mixture over each tortilla, then top with cheddar and mozzarella cheese.
-
Roll and Bake: Roll each tortilla tightly, tucking in the sides to secure the filling. Place seam-side down on the baking sheet. Brush generously with the garlic butter mixture.
-
Bake: Bake for 12–15 minutes, until the rollups are golden and the cheese inside is melted and bubbly.
-
Serve: Let the rollups cool slightly before slicing into pinwheels. Garnish with sliced pickles (optional) and serve warm.
Notes
Lean Meat Option: You can substitute ground beef with ground turkey for a leaner version of these rollups. Turkey may alter the flavor slightly but will still be delicious.
Cheese Variations: Swap out mozzarella and cheddar for other cheeses like Swiss, provolone, or Gouda for different flavor profiles.
Extra Flavor: For a tangy kick, add sliced pickles or pickle juice to the filling before rolling them up.
Make Ahead: You can assemble the rollups ahead of time, cover them, and refrigerate until ready to bake. Add a few extra minutes to the baking time if baking from cold.
Freezing Option: Freeze the unbaked rollups for up to 3 months. When ready to bake, cook from frozen, adding an extra 5-10 minutes to the baking time.
