Description

These Frozen Strawberry Chia Oat Coins are a refreshing, no-bake snack made with rolled oats, chia seeds, and juicy strawberries. Naturally sweetened and full of texture, they’re the perfect healthy treat for breakfast, snacking, or post-workout fuel straight from the freezer.


Ingredients

2 cups rolled oats

1 cup frozen strawberries, thawed and chopped

¼ cup chia seeds

½ cup almond milk (or milk of choice)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

Optional: ¼ cup chopped nuts or dark chocolate chips


Instructions

  1. In a large bowl, combine rolled oats, chia seeds, cinnamon, and salt. Stir to evenly mix the dry ingredients.
  2. In a separate bowl, whisk together almond milk, honey or maple syrup, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry mixture and stir until well combined. Fold in the chopped strawberries and any optional add-ins like nuts or chocolate chips.
  4. Using a tablespoon or cookie scoop, form small, flat rounds (about 2 inches wide) and place them on a parchment-lined baking sheet.
  5. Freeze for 1–2 hours, or until the oat coins are firm.
  6. Once frozen, transfer to an airtight container or zip-top bag. Store in the freezer for up to 2 months.
  7. Enjoy straight from the freezer or thaw for a few minutes for a softer texture.

Notes

Use fresh strawberries (patted dry) instead of frozen if desired.

Add a tablespoon of nut butter for richness and extra protein.

Sprinkle granola or crushed almonds on top before freezing for crunch.

Replace strawberries with mixed berries, mango, or pineapple for a fruity twist.

To make vegan, use maple syrup and plant-based milk.
