These Frozen Strawberry Chia Oat Coins are a refreshing, no-bake snack made with rolled oats, chia seeds, and juicy strawberries. Naturally sweetened and full of texture, they’re the perfect healthy treat for breakfast, snacking, or post-workout fuel straight from the freezer.
Ingredients
2 cups rolled oats
1 cup frozen strawberries, thawed and chopped
¼ cup chia seeds
½ cup almond milk (or milk of choice)
¼ cup honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon salt
Optional: ¼ cup chopped nuts or dark chocolate chips
Instructions
- In a large bowl, combine rolled oats, chia seeds, cinnamon, and salt. Stir to evenly mix the dry ingredients.
- In a separate bowl, whisk together almond milk, honey or maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir until well combined. Fold in the chopped strawberries and any optional add-ins like nuts or chocolate chips.
- Using a tablespoon or cookie scoop, form small, flat rounds (about 2 inches wide) and place them on a parchment-lined baking sheet.
- Freeze for 1–2 hours, or until the oat coins are firm.
- Once frozen, transfer to an airtight container or zip-top bag. Store in the freezer for up to 2 months.
- Enjoy straight from the freezer or thaw for a few minutes for a softer texture.
Notes
Use fresh strawberries (patted dry) instead of frozen if desired.
Add a tablespoon of nut butter for richness and extra protein.
Sprinkle granola or crushed almonds on top before freezing for crunch.
Replace strawberries with mixed berries, mango, or pineapple for a fruity twist.
To make vegan, use maple syrup and plant-based milk.
