Description

Frozen Banana Bites are a simple yet indulgent dessert that combines creamy peanut butter, rich chocolate, and crunchy toffee bits, creating a treat that’s hard to resist.


Ingredients

1 cup peanut butter

4 bananas, sliced into 1-inch rounds

8 (1 ounce) squares semisweet chocolate

1 tablespoon shortening

⅓ cup toffee baking bits


Instructions

  1. Cover a baking sheet with waxed paper.
  2. Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter into the banana slice.
  3. Place the banana bites onto the prepared baking sheet and freeze for 30 minutes to overnight.
  4. Melt the chocolate and shortening in the top of a double boiler over simmering water. Stir frequently and scrape down the sides with a rubber spatula to avoid scorching.
  5. Cover another baking sheet with waxed paper.
  6. Remove 2 to 4 banana bites from the freezer at a time. Dip each bite into the melted chocolate mixture and coat evenly. Place the coated banana bites on the second baking sheet.
  7. Sprinkle each chocolate-coated banana bite with toffee baking bits.
  8. Return the banana bites to the freezer until set, at least 1 hour.
  9. Let the bites sit at room temperature for about 15 minutes before serving.

Notes

Feel free to experiment with different toppings, such as sprinkles, crushed nuts, or cookie crumbs.

For a richer taste, substitute semisweet chocolate with dark chocolate.

Swap peanut butter for almond or cashew butter if desired.

Store in an airtight container in the freezer for up to 1 month.

For vegan options, use plant-based peanut butter, dairy-free chocolate, and coconut oil instead of shortening.
