Frozen Banana Bites are a simple yet indulgent dessert that combines creamy peanut butter, rich chocolate, and crunchy toffee bits, creating a treat that’s hard to resist.
Ingredients
1 cup peanut butter
4 bananas, sliced into 1-inch rounds
8 (1 ounce) squares semisweet chocolate
1 tablespoon shortening
⅓ cup toffee baking bits
Instructions
- Cover a baking sheet with waxed paper.
- Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter into the banana slice.
- Place the banana bites onto the prepared baking sheet and freeze for 30 minutes to overnight.
- Melt the chocolate and shortening in the top of a double boiler over simmering water. Stir frequently and scrape down the sides with a rubber spatula to avoid scorching.
- Cover another baking sheet with waxed paper.
- Remove 2 to 4 banana bites from the freezer at a time. Dip each bite into the melted chocolate mixture and coat evenly. Place the coated banana bites on the second baking sheet.
- Sprinkle each chocolate-coated banana bite with toffee baking bits.
- Return the banana bites to the freezer until set, at least 1 hour.
- Let the bites sit at room temperature for about 15 minutes before serving.
Notes
Feel free to experiment with different toppings, such as sprinkles, crushed nuts, or cookie crumbs.
For a richer taste, substitute semisweet chocolate with dark chocolate.
Swap peanut butter for almond or cashew butter if desired.
Store in an airtight container in the freezer for up to 1 month.
For vegan options, use plant-based peanut butter, dairy-free chocolate, and coconut oil instead of shortening.
