Description

Fried Piña Colada Rings are a tropical treat that brings together the sweet flavors of pineapple, coconut, and rum in a crispy, golden bite. Coated in shredded coconut and served with a creamy, rum-infused dipping sauce, these rings make the perfect dessert or party snack. A fun twist on your favorite piña colada, these crispy treats are sure to impress!


Ingredients

8 pineapple rings

1 cup dark rum

1 cup coconut rum

1 1/2 cups all-purpose flour

10 oz bag sweetened shredded coconut

2 large eggs

1/2 cup coconut milk

Vegetable oil, for frying

4 oz cream cheese, softened

1/2 cup powdered sugar


Instructions

  • Soak the Pineapple: Place the pineapple rings in a bowl and cover with dark and coconut rum. Let soak for at least 1 hour. Drain and pat dry.

  • Prepare the Coating: In three shallow bowls, place the flour, shredded coconut, and whisk together eggs and coconut milk.

  • Coat the Pineapple: Dip each pineapple ring into the flour, then the egg mixture, and finally coat with shredded coconut, pressing gently to adhere.

  • Fry the Pineapple: Heat vegetable oil in a deep pot to about 350°F (175°C). Fry the pineapple rings in batches for about 1 minute per side, until golden and crispy. Remove and drain on paper towels.

  • Make the Dipping Sauce: In a bowl, combine softened cream cheese and powdered sugar until smooth. Add 2 tablespoons of reserved rum, adding more as needed for consistency.

  • Serve: Serve the fried pineapple rings with the rum-infused dipping sauce.


Notes

For a non-alcoholic version, soak the pineapple in pineapple juice.

Add a spicy kick by mixing cayenne pepper or chili powder into the flour.

Make it dairy-free by using non-dairy cream cheese for the dipping sauce.
