Ingredients
8 pineapple rings
1 cup dark rum
1 cup coconut rum
1 1/2 cups all-purpose flour
10 oz bag sweetened shredded coconut
2 large eggs
1/2 cup coconut milk
Vegetable oil, for frying
4 oz cream cheese, softened
1/2 cup powdered sugar

Soak the Pineapple: Place the pineapple rings in a bowl and cover with dark and coconut rum. Let soak for at least 1 hour. Drain and pat dry.

Prepare the Coating: In three shallow bowls, place the flour, shredded coconut, and whisk together eggs and coconut milk.

Coat the Pineapple: Dip each pineapple ring into the flour, then the egg mixture, and finally coat with shredded coconut, pressing gently to adhere.

Fry the Pineapple: Heat vegetable oil in a deep pot to about 350°F (175°C). Fry the pineapple rings in batches for about 1 minute per side, until golden and crispy. Remove and drain on paper towels.

Make the Dipping Sauce: In a bowl, combine softened cream cheese and powdered sugar until smooth. Add 2 tablespoons of reserved rum, adding more as needed for consistency.
