This Fresh Mexican Coleslaw Salad is a zesty, crunchy side dish featuring cabbage, cilantro, lime juice, and a hint of spice. Perfect for tacos, grilled meats, and BBQs, this quick and easy slaw is refreshing, vibrant, and full of bold flavors!

Ingredients

  • 16 oz coleslaw mix (3-color deli-style)
  • ½ cup fresh cilantro, roughly chopped
  • ¼ cup fresh lime juice
  • 1 tsp lime zest
  • 2 tbsp apple cider vinegar
  • ½ tsp ground cumin
  • 2 tbsp sugar
  • 1 tsp hot sauce (adjust to taste)
  • 1 tsp sea salt
  • ¼ cup olive oil
  • 2 tbsp pickled jalapeños, finely chopped (optional for added heat)

Instructions

1. Prepare the Dressing:

  1. In a large bowl, whisk together lime juice, lime zest, apple cider vinegar, cumin, sugar, hot sauce, sea salt, and olive oil until well combined.

2. Assemble the Salad:

  1. Add the coleslaw mix and chopped cilantro to the bowl.
  2. Stir in pickled jalapeños for extra heat, if desired.
  3. Toss everything together until evenly coated with the dressing.

3. Chill & Serve:

  1. Refrigerate for at least 1 hour to let the flavors meld.
  2. Serve chilled as a side dish to tacos, grilled meats, or sandwiches.

Notes

  • Sweet & Spicy Twist – Add diced mango or pineapple for a tropical kick.
  • Creamy Version – Mix in Greek yogurt or mayonnaise for a richer texture.
  • Extra Crunch – Sprinkle with toasted pepitas or almonds before serving
