Description
A comforting French-inspired carrot lentil soup made with tender lentils, sweet carrots, warm spices, and a bright finish of lemon juice. Nourishing, hearty, and perfect for a cozy, wholesome meal.
Ingredients
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
4 medium carrots, peeled and diced
1 cup dried green or brown lentils
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
4 cups vegetable broth
1 cup water
Salt, to taste
Black pepper, to taste
1 tablespoon fresh lemon juice
1/4 cup fresh parsley, chopped
Optional: 1/2 teaspoon red pepper flakes
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 5 minutes until soft and translucent.
- Add the garlic, cumin, coriander, and turmeric, stirring constantly for 1–2 minutes until fragrant.
- Stir in the diced carrots and cook for about 5 minutes.
- Add the lentils, vegetable broth, and water, stirring well to combine.
- Bring the soup to a boil, then reduce the heat, cover, and simmer for 30–40 minutes until lentils and carrots are tender.
- Season with salt and pepper and stir in the lemon juice.
- Optionally blend part or all of the soup for a creamier texture.
- Ladle into bowls, garnish with chopped parsley, and serve warm.
Notes
Blend the entire soup for a smooth texture if desired.
Add red pepper flakes for gentle heat.
The soup thickens as it cools; add water or broth when reheating.
Flavors deepen when made a day ahead.
