Ingredients
2 ½ cups all-purpose flour
1 ½ cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
1 cup buttermilk
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla extract
1 teaspoon cinnamon
½ teaspoon cayenne pepper (adjust for spice level)
1 cup colorful sprinkles
1 cup rainbow-colored frosting (for decoration)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cayenne pepper. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.
- Add Eggs: Add the eggs one at a time, mixing well after each addition. Ensure everything is well blended.
- Incorporate Buttermilk and Vanilla: Gradually add the buttermilk and vanilla extract to the butter mixture. Mix until smooth.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients. Mix just until combined; be careful not to overmix.
- Add Sprinkles: Gently fold in the colorful sprinkles, ensuring they are evenly distributed throughout the batter.
- Pour Batter: Pour the batter into the prepared Bundt pan. Use a spatula to smooth the top evenly.
- Bake: Place the Bundt pan in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the Cake: Remove from the oven and allow the cake to cool in the pan for about 15-20 minutes. Then, carefully invert it onto a wire rack and cool completely.
- Decorate: Once the cake is completely cooled, drizzle or spread the rainbow-colored frosting over the top. Add extra sprinkles for the perfect finish.
Notes
If you want more spice, increase the cayenne pepper to your desired heat level.
Substitute the vanilla extract with almond extract or add orange zest for a different flavor profile.
For a vegan version, replace the eggs with flaxseed or chia seed mixture, and use a dairy-free butter and milk alternative.
