Description
Fasolakia is a traditional Greek dish where green beans and potatoes are braised in a rich tomato sauce, flavored with fresh herbs and olive oil. This hearty, vegetarian recipe is simple to make, light, and perfect as a main course or side dish. Top it with crumbled feta for extra flavor and enjoy with crusty bread for a Mediterranean meal.
Ingredients
2 medium potatoes, peeled and chopped into chunks
4 tbsp extra virgin olive oil
1 white onion, diced
220g green beans (fresh or frozen)
1 tbsp tomato paste
400g chopped/crushed tomatoes
1 tbsp light brown sugar
Salt and pepper, to taste
20g fresh parsley, diced (reserve some for garnish)
100g crumbled feta cheese (optional, for topping)
Instructions

Prepare the Vegetables:
Peel and chop the potatoes into chunks. Dice the onion and prepare the parsley. -
Sauté the Onion:
Heat 3 tbsp of olive oil in a pan over medium heat. Add the onion and sauté for 5-6 minutes until softened. -
Cook the Potatoes:
Add the chopped potatoes to the pan and sauté for an additional 2-3 minutes to allow the edges to crisp up. -
Make the Sauce:
Stir in the tomato paste, followed by the chopped/crushed tomatoes, light brown sugar, salt, and pepper. Mix well. -
Simmer:
Add the green beans and most of the parsley (save some for garnish). Cover and simmer for 20-30 minutes, or until the potatoes are fork-tender. -
Serve:
Garnish with crumbled feta cheese and the reserved parsley before serving.
Notes
For Extra Flavor: Add zucchini or carrots for more variety.
Vegan Option: Omit the feta or use a plant-based alternative.
