Description

Egg and Cheese Toasts are a quick, delicious, and customizable meal that combines crispy toast with a rich egg and cheese mixture. Perfect for breakfast, a snack, or a light lunch, these toasts are made in just 19 minutes with simple ingredients.

Ingredients

2 slices bread

1 large egg

1/2 cup (2 ounces) grated cheese (cheddar, pepper jack, or gruyere are great options)

1 teaspoon finely chopped fresh herbs (such as thyme or rosemary)

Salt and black pepper

Pinch of cayenne (optional)

Instructions

  1. Toast the Bread: Lightly toast the bread or broil it for 1 to 2 minutes on each side. This will give it a nice base to hold the egg and cheese mixture.
  2. Preheat the Oven: Preheat the oven to 400°F. If using a toaster oven, adjust the cooking rack to the bottom placement and select the ‘BAKE’ setting.
  3. Prepare the Egg Mixture: Crack the egg into a small bowl and beat it with a fork until the yolk and white are fully combined. Mix in the grated cheese and fresh herbs, if using. Add salt and black pepper to taste. For an added kick, sprinkle in a pinch of cayenne.
  4. Spread on Toast: Spread the egg and cheese mixture over the toasted bread, making sure to cover all the way to the edges.
  5. Bake: Place the bread in the oven and bake until the cheese is bubbly and slightly browned, and the egg is set—about 10 to 12 minutes.
  6. Serve: Remove from the oven, and serve your warm, cheesy toast immediately. Enjoy!

Notes

Cheese Options: Experiment with different types of cheese—mozzarella, gouda, or even a blue cheese for a unique flavor.

Herb Variations: Try using different fresh herbs like basil, chives, or parsley depending on what you have available.

Add Veggies: Top the toasts with sliced tomatoes, spinach, or sautéed mushrooms for an extra nutritional boost.
