Description

These Quick and Easy Meatball Subs are the perfect combination of savory homemade meatballs, marinara sauce, and melted Provolone cheese, all served in a toasted sandwich roll. Ready in just 20 minutes, they make a satisfying and delicious meal.


Ingredients

1 lb ground beef

2 eggs

½ cup milk

½ cup Parmesan cheese (grated)

1 cup breadcrumbs

1 onion (diced)

4 garlic cloves (minced)

½ teaspoon oregano

1 teaspoon salt

6 sandwich rolls (sliced in half)

6 slices Provolone cheese

1 jar marinara sauce


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a medium bowl, combine the ground beef, eggs, milk, Parmesan cheese, breadcrumbs, diced onion, minced garlic, oregano, and salt. Mix until evenly combined.
  3. Roll the mixture into 1–2-inch meatballs and place them on the cookie sheet. Bake for about 30 minutes, or until fully cooked.
  4. While the meatballs bake, pour the marinara sauce into a pan and heat over low heat. Once the meatballs are cooked, add them to the sauce and let them simmer for about 10 minutes.
  5. Slice the sandwich rolls in half and toast them until golden brown.
  6. Assemble the subs by placing meatballs and marinara sauce onto the sandwich rolls. Place half slices of Provolone cheese over the meatballs, covering the length of the sandwich.
  7. Place the assembled subs on a baking sheet and broil for 1-2 minutes until the cheese is melted and bubbly.
  8. Remove from the oven and serve immediately, enjoying the cheesy, savory subs!

Notes

Add red pepper flakes to the marinara sauce or on top of the cheese for a spicy version.

Substitute Provolone with mozzarella, cheddar, or a cheese blend for a different flavor.

For a vegetarian version, swap ground beef with a plant-based meat substitute.
