Description
This Easy Impossible Quiche is a simple, crustless dish made with chicken, cheese, and eggs. With a self-crusting nature thanks to self-raising flour, it’s perfect for any meal, be it breakfast, lunch, or dinner.
Ingredients
125g cooked chicken, chopped
1 small onion, finely chopped
1½ cups (180g) grated tasty cheese
1/3 cup (50g) self-raising flour
4 eggs
1½ cups (375ml) milk
Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (392°F) and grease a 5-cup capacity pie dish.
- In a medium bowl, combine the chopped chicken, onion, cheese, and self-raising flour. Season with salt and pepper and mix thoroughly. Scatter the mixture evenly in the pie dish.
- In a large jug, whisk the eggs and milk together until smooth.
- Pour the egg and milk mixture evenly over the chicken and cheese filling, ensuring it covers everything.
- Bake for about 40 minutes, or until the quiche is puffed up and golden brown on top.
- Allow to cool slightly before serving. Enjoy warm or cold.
Notes
Customize by adding vegetables like spinach, mushrooms, or bell peppers, or swap the chicken for smoked salmon for a different flavor.
Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven or microwave.
For a gluten-free version, use a gluten-free self-raising flour substitute.
