Description

Easy Homemade Pasta is a simple, fun, and delicious way to make fresh pasta from scratch using just two ingredients. This recipe helps you create flavorful, tender pasta without needing a pasta machine.


Ingredients

420 g (3¼ cups) plain (all-purpose) flour

4 large eggs


Instructions

  1. Place the flour and eggs into the bowl of a stand mixer fitted with the dough hook attachment. Start mixing on low speed until the dough begins to come together. If the dough feels too dry, add a splash of water. If it’s too sticky, add extra flour.
  2. Once the dough starts to form a rough ball, increase the speed to medium and knead for 5 minutes until smooth and elastic. The dough should feel soft but firm, not too sticky or dry.
  3. Wrap the dough tightly in cling film or wax paper and refrigerate for at least 30 minutes (up to 12 hours) to rest.
  4. Divide the dough into four equal pieces. On a lightly floured surface, roll each piece as thin as possible using a rolling pin. The dough should be thin enough to see the outline of your hand through it.
  5. Cut the rolled-out dough into your desired shape: rectangles for lasagna, squares for ravioli, or strips for tagliatelle. For tagliatelle, lightly flour the dough, roll it up loosely, and slice into ½ cm wide strips. Unroll and separate the strands.
  6. Bring a large pot of well-salted water to a boil. Add the pasta and cook for 2-4 minutes or until tender. Fresh pasta cooks much faster than dried pasta, so be sure to check for doneness early.

Notes

If you don’t have a stand mixer, you can mix the dough by hand or use a food processor.

Resting the dough helps make it more pliable and easier to roll out. Don’t skip this step!
