Description
A quick and comforting cheese toast topped with rich melted cheddar, optional vegetables, and eggs for a hearty brunch or easy meal.
Ingredients
1 pound aged cheddar cheese, thinly sliced
1 large tomato, diced with seeds removed (optional)
1/2 cup purple onion, diced
4 slices sturdy bread, toasted
1–2 tablespoons butter (plus more for toast if desired)
4 large eggs, fried or poached (optional)
1/2 pound beef sausage, chopped and cooked until crisp (optional)
Instructions
- Place a medium saucepan over low heat and melt 1–2 tablespoons of butter.
- Add sliced cheddar one layer at a time, allowing each layer to melt before adding more. Stir gently until fully melted.
- If excess oil forms, carefully drain some, leaving enough for flavor.
- Stir in diced tomato, purple onion, and cooked sausage if using. Mix until well combined, then remove from heat.
- Toast the bread and butter if desired.
- Spoon the hot cheese mixture generously over each slice of toast.
- Top with a fried or poached egg if desired and serve immediately.
Notes
Keep heat low to prevent cheese from separating.
Use sturdy bread like sourdough to support the topping.
Assemble just before serving to keep toast crisp.
Leftover cheese mixture can be refrigerated for up to 2 days.
