Ingredients
8 medium-sized lamb chops
2 tsp salt
1 tsp black pepper
1 tbsp dried oregano
½ tsp onion powder
2 tsp dried thyme
½ tbsp smoked paprika
3–4 garlic cloves
½ red bell pepper
¼ cup olive oil
Juice from ½ lemon
Fresh parsley (for garnish)
Instructions

Prepare the Marinade: Blend red bell pepper, garlic, and parsley into a paste. Mix with olive oil, lemon juice, oregano, thyme, onion powder, paprika, salt, and pepper.

Marinate the Lamb: Cut lamb rack into chops, coat with the marinade, and refrigerate for at least 1 hour. Let come to room temperature before cooking.

Sear the Lamb: Preheat oven to 400°F (200°C). Heat olive oil in a skillet over medium-high heat. Sear lamb chops 1–2 minutes per side until browned.

Bake: Transfer skillet to the oven.
