Description

These Easy Baked Lamb Chops are tender, juicy, and full of savory herb and spice flavor. Marinated with garlic, lemon, and aromatic herbs, then seared and baked to perfection, they’re the perfect choice for holidays, dinner parties, or a quick yet elegant weeknight meal. Simple to prepare and full of rich, Mediterranean-inspired taste!


Ingredients

8 medium-sized lamb chops

2 tsp salt

1 tsp black pepper

1 tbsp dried oregano

½ tsp onion powder

2 tsp dried thyme

½ tbsp smoked paprika

34 garlic cloves

½ red bell pepper

¼ cup olive oil

Juice from ½ lemon

Fresh parsley (for garnish)


Instructions

  • Prepare the Marinade: Blend red bell pepper, garlic, and parsley into a paste. Mix with olive oil, lemon juice, oregano, thyme, onion powder, paprika, salt, and pepper.

  • Marinate the Lamb: Cut lamb rack into chops, coat with the marinade, and refrigerate for at least 1 hour. Let come to room temperature before cooking.

  • Sear the Lamb: Preheat oven to 400°F (200°C). Heat olive oil in a skillet over medium-high heat. Sear lamb chops 1–2 minutes per side until browned.

  • Bake: Transfer skillet to the oven.

    • Medium-rare: 2–5 minutes

    • Medium-well: 5–10 minutes

  • Serve: Remove from skillet to stop cooking. Garnish with parsley and serve hot.


Notes

Spicy Version: Add chili flakes or cayenne to the marinade.

Herb Variations: Use fresh mint or rosemary instead of parsley.

Grilling Option: Grill lamb chops over medium-high heat instead of baking.
