Description

Double the Streusel Apple Butter Bars are rich, buttery dessert bars layered with a crunchy oat-pecan streusel, sweet apple butter, and spiced apple slices. They’re full of cozy fall flavors and perfect for gatherings, potlucks, or enjoying with coffee or tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups old fashioned oats
  • 1/2 cup raw pecans
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 sticks (1 cup) cold salted butter, cubed

Filling:

  • 1 cup apple butter (homemade or store-bought)
  • 2 Honeycrisp apples, thinly sliced
  • 2 tablespoons pure maple syrup
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 2 tablespoons cold salted butter, thinly sliced

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a food processor, pulse together flour, oats, pecans, brown sugar, baking powder, and cinnamon until oats are mostly ground.
  3. Add cold butter and pulse until a crumbly dough forms. If too dry, add 1 tablespoon water.
  4. Press one-third of dough into the prepared pan and bake for 10 minutes until lightly golden.
  5. Meanwhile, toss apple slices with maple syrup, flour, cinnamon, nutmeg, and vanilla.
  6. Spread apple butter over baked crust, then layer apple slices on top.
  7. Sprinkle remaining streusel mixture over apples and dot with thin slices of butter.
  8. Bake 30–40 minutes, until topping is golden brown.
  9. Cool completely before slicing into bars.

Notes

  • Swap pecans with walnuts, almonds, or seeds for a nut-free version.
  • Add dried cranberries, raisins, or caramel for extra flavor.
  • Use pears instead of apples for a delicious variation.
  • For richer flavor, replace some brown sugar with maple sugar.
  • Let bars cool fully before slicing to prevent crumbling.
