Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups old fashioned oats
- 1/2 cup raw pecans
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 sticks (1 cup) cold salted butter, cubed
Filling:
- 1 cup apple butter (homemade or store-bought)
- 2 Honeycrisp apples, thinly sliced
- 2 tablespoons pure maple syrup
- 1 tablespoon all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoons vanilla extract
- 2 tablespoons cold salted butter, thinly sliced
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- In a food processor, pulse together flour, oats, pecans, brown sugar, baking powder, and cinnamon until oats are mostly ground.
- Add cold butter and pulse until a crumbly dough forms. If too dry, add 1 tablespoon water.
- Press one-third of dough into the prepared pan and bake for 10 minutes until lightly golden.
- Meanwhile, toss apple slices with maple syrup, flour, cinnamon, nutmeg, and vanilla.
- Spread apple butter over baked crust, then layer apple slices on top.
- Sprinkle remaining streusel mixture over apples and dot with thin slices of butter.
- Bake 30–40 minutes, until topping is golden brown.
- Cool completely before slicing into bars.
Notes
- Swap pecans with walnuts, almonds, or seeds for a nut-free version.
- Add dried cranberries, raisins, or caramel for extra flavor.
- Use pears instead of apples for a delicious variation.
- For richer flavor, replace some brown sugar with maple sugar.
- Let bars cool fully before slicing to prevent crumbling.
