Ingredients
- 8 oz cream cheese, softened
- ¼ cup mayonnaise
- 2 tablespoons lemon juice (fresh preferred)
- ¼ cup chopped chives
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 2 English cucumbers, thinly sliced
- 8 slices white bread (crusts removed)
Instructions
- Prepare the Spread: In a mixing bowl, combine cream cheese, mayonnaise, lemon juice, chives, dill, parsley, salt, and pepper. Mix until smooth and well combined.
- Assemble the Sandwiches: Spread the cream cheese mixture evenly on two slices of bread. Layer with thin cucumber slices, then top with the other slice of bread.
- Cut and Serve: Cut the sandwiches into halves or quarters, preferably diagonally, and serve immediately.
Notes
- Vinegar-Infused Cucumbers: For extra flavor, toss cucumber slices in a bit of white vinegar before adding them to the sandwich.
- Herb Swap: Use basil or mint instead of parsley for a refreshing twist.
- Whole Grain Bread: Swap white bread for whole grain for a healthier option.
