Description

Cucumber Sandwiches with Creamy Dill Spread are a light, refreshing appetizer perfect for summer gatherings, picnics, or a quick snack. With crisp cucumber slices, soft bread, and a zesty, creamy dill spread, these easy-to-make sandwiches are both delicious and versatile. They’re perfect for when you need a lighter bite with a flavorful twist.

Ingredients

  • 8 oz cream cheese, softened
  • ¼ cup mayonnaise
  • 2 tablespoons lemon juice (fresh preferred)
  • ¼ cup chopped chives
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 2 English cucumbers, thinly sliced
  • 8 slices white bread (crusts removed)

Instructions

  1. Prepare the Spread: In a mixing bowl, combine cream cheese, mayonnaise, lemon juice, chives, dill, parsley, salt, and pepper. Mix until smooth and well combined.
  2. Assemble the Sandwiches: Spread the cream cheese mixture evenly on two slices of bread. Layer with thin cucumber slices, then top with the other slice of bread.
  3. Cut and Serve: Cut the sandwiches into halves or quarters, preferably diagonally, and serve immediately.

Notes

  • Vinegar-Infused Cucumbers: For extra flavor, toss cucumber slices in a bit of white vinegar before adding them to the sandwich.
  • Herb Swap: Use basil or mint instead of parsley for a refreshing twist.
  • Whole Grain Bread: Swap white bread for whole grain for a healthier option.
