Ingredients
2 cups cucumber, peeled and chopped
1/2 cup fresh lime juice (about 4 limes)
1/4 cup granulated sugar (adjust to taste)
1/2 cup dry gin
10 fresh mint leaves
Instructions
- Blend the chopped cucumber until smooth to create a fresh cucumber puree.
- Muddle the mint leaves with the sugar in a bowl until the leaves release their oils and become fragrant.
- Mix the cucumber puree, fresh lime juice, dry gin, and muddled mint mixture together. Stir well to combine.
- Pour the mixture into popsicle molds, ensuring an even fill in each mold.
- Freeze for 4-6 hours or until completely solid.
- Once frozen, remove the popsicles from the molds and enjoy your refreshing Cucumber Gin Fizz Pops!
Notes
Feel free to adjust the sweetness by adding more or less sugar to taste.
