Ingredients
- 16 oz rotini pasta (or similar medium-sized pasta)
- 1 lb ground beef
- 3 tablespoons taco seasoning
- 1 ½ cups chopped fresh tomatoes
- 1 cup diced green bell pepper
- 2–3 cups Mexican shredded cheese (or cheese of choice)
- Optional: Crushed taco chips or tortilla chips for topping
Instructions

- Bring a large pot of salted water to a boil.
- Add rotini pasta and cook until al dente, following package instructions.
- Drain and rinse with cold water to cool the pasta down. Set aside.
