Ingredients
For the Tacos:
- 1 pound lean ground beef (90%)
- 1 packet taco seasoning
- ¾ cup enchilada sauce
- 2.5 cups Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican cheese blend)
- 10 corn tortillas
- 1 tablespoon olive oil
For Serving:

Instructions
- Preheat the Oven: Set the oven to 450°F (230°C).
- Cook the Beef: In a skillet over medium-high heat, brown the ground beef. Drain excess fat if needed. Stir in taco seasoning and enchilada sauce, then simmer for a few minutes.
- Warm the Tortillas: Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
- Assemble the Tacos: Brush one side of each tortilla with olive oil and place the oiled side down on a baking sheet. Add shredded cheese, beef mixture, and more cheese on one half of the tortilla, then fold over.
- Bake Until Crispy: Bake for 16 minutes or until the tortillas are crispy and golden brown.
