- 12 ounces rigatoni pasta
- 1 bunch asparagus, cut into 1-inch pieces
- 2 tablespoons butter
- 1 lemon, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup vegetable broth
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Toast the breadcrumbs: Heat olive oil in a skillet over medium heat. Add panko breadcrumbs, pistachios, and crushed red pepper flakes. Toast until golden brown, then set aside.
- Cook the pasta: Boil rigatoni pasta according to package instructions. Drain and set aside.
