Description

Creamy Garlic Sauce Baby Potatoes are a comforting side dish made with tender baby potatoes and a rich, flavorful garlic sauce. Infused with herbs and cream, this dish is quick to make, versatile, and perfect for pairing with a variety of main dishes. It’s a delicious, indulgent treat that’s ideal for weeknight dinners or special occasions.

Ingredients

1 lb baby potatoes, washed and halved

2 tablespoons olive oil

3 tablespoons butter

5 cloves garlic, minced

1 cup heavy cream (or a lighter alternative)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

½ cup grated parmesan cheese (optional)

Instructions

  1. Boil the Baby Potatoes: Wash and halve the baby potatoes. Place them in a pot, cover with water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 10-12 minutes until fork-tender. Drain and set aside.
  2. Prepare the Creamy Garlic Sauce: Heat olive oil and butter in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Make the Sauce: Add the heavy cream to the skillet, stirring to combine. Bring to a simmer and add thyme, salt, and pepper. Let the sauce simmer for 3-5 minutes until it thickens slightly.
  4. Combine the Potatoes and Sauce: Add the cooked baby potatoes to the skillet and toss them gently to coat in the sauce. Cook for an additional 3-4 minutes to allow the potatoes to soak up the flavors and crisp slightly.
  5. Final Touches: Remove from heat, transfer the potatoes to a serving dish, and garnish with freshly chopped parsley. Optionally, sprinkle with grated parmesan cheese for extra flavor.
  6. Serve: Serve warm as a side dish or snack.

Notes

Use Yukon gold or red potatoes as substitutes for baby potatoes if preferred.

To make this dish dairy-free, substitute the heavy cream with coconut cream or a dairy-free cream alternative and use dairy-free butter.

Add vegetables like spinach or peas to enhance the dish and make it more colorful.

If you prefer a spicier dish, add red pepper flakes, cayenne pepper, or hot sauce to the garlic sauce.

This dish pairs beautifully with grilled meats, roasted vegetables, or can even be enjoyed as a standalone snack.
