This creamy garlic chicken and mushroom pasta features tender chicken, earthy mushrooms, and fettuccine coated in a rich Parmesan cream sauce. It is a comforting and satisfying meal perfect for weeknights or special dinners.
Ingredients
8 oz fettuccine or pasta of choice
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, sliced
8 oz mushrooms, sliced
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add sliced chicken, season with salt and pepper, and cook for 5 to 7 minutes until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add sliced mushrooms and sauté for 4 to 5 minutes until golden and tender. Stir in minced garlic and cook for 1 to 2 minutes until fragrant.
- Pour in chicken broth and bring to a gentle simmer. Reduce heat and stir in heavy cream, Italian seasoning, and grated Parmesan cheese. Cook for 3 to 4 minutes, stirring occasionally, until the sauce thickens slightly.
- Return the cooked chicken to the skillet and add the drained pasta. Toss until evenly coated in the creamy sauce.
- Remove from heat, garnish with chopped fresh parsley, and serve immediately.
Notes
Swap fettuccine with penne, linguine, or spaghetti as desired.
Add spinach or steamed broccoli at the end for extra vegetables.
For a lighter version, replace part of the heavy cream with half-and-half.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently with a splash of broth or cream to loosen the sauce.
