Description

Ingredients

2 tablespoons unsalted butter

1 medium yellow onion, diced

2 cloves garlic, minced

3 cups cooked chicken breast, shredded

4 cups chicken broth

1 cup heavy cream

2 tablespoons everything bagel seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 ounces cream cheese, softened

2 tablespoons chopped fresh chives (optional, for garnish)


Instructions

  1. Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-6 minutes until the vegetables are softened.
  2. Add Garlic: Add the minced garlic and cook for 1 minute until fragrant.
  3. Simmer the Soup: Stir in the shredded chicken, chicken broth, everything bagel seasoning, salt, and black pepper. Bring to a gentle boil, then reduce the heat and let it simmer for 15 minutes.
  4. Incorporate the Cream: Add the cream cheese and stir until fully melted and incorporated. Pour in the heavy cream and continue to simmer for another 5 minutes, stirring occasionally.
