Ingredients
¼ cup unsalted butter
1 sweet onion, diced
3 carrots, peeled and sliced
2 ribs celery, diced
3 cloves garlic, minced
2 teaspoons finely chopped fresh thyme leaves
¼ cup all-purpose flour
¼ cup apple cider vinegar or lemon juice
6 cups chicken stock
1 bay leaf
Kosher salt and freshly ground black pepper, to taste
3 cups leftover shredded rotisserie chicken
2 cups wide egg noodles
½ cup heavy cream
½ cup frozen green peas
2 tablespoons chopped fresh parsley leaves
Instructions
- In a large stockpot, melt the butter over medium heat. Add diced onion, carrots, and celery. Cook until vegetables are tender, about 3–4 minutes.
- Stir in garlic and thyme, cooking for about 1 minute until fragrant.
- Whisk in flour and cook for 1 minute, then stir in apple cider vinegar or lemon juice to deglaze the pot.
- Pour in chicken stock and add bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
- Stir in shredded rotisserie chicken and egg noodles. Cook for 10–12 minutes, or until noodles are tender.
- Stir in heavy cream, frozen peas, and parsley. Heat through for 1–2 minutes, then adjust seasoning with salt and pepper.
- Serve immediately, garnished with extra parsley if desired.

For a vegetarian version, omit the chicken and use vegetable broth. Add more veggies like corn or mushrooms for texture.
