Ingredients
- 8 oz rotini pasta (or any short pasta of your choice)
- 1 lb shrimp, peeled and deveined
- 1 lb chicken breast, diced
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes (optional, for extra spice)
- 1/2 tsp salt (adjust to taste)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: In a large pot of salted boiling water, cook the pasta until al dente, about 8-10 minutes. Drain and set aside.
- Season the Meat: Season the shrimp and diced chicken with 1 tablespoon of Cajun seasoning.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5-6 minutes until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Cook the Shrimp: In the same skillet, melt the butter. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
- Prepare the Sauce: Reduce the heat to medium-low. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Make the Creamy Sauce: Stir in the heavy cream, milk, Parmesan cheese, cheddar cheese, smoked paprika, and the remaining Cajun seasoning. Stir until smooth and creamy.
- Combine: Add the cooked pasta, chicken, and shrimp to the skillet. Toss everything together to coat in the creamy Cajun sauce.
- Season and Serve: Adjust the seasoning with salt and red pepper flakes, if desired. Garnish with fresh parsley and serve warm.
Notes
- Spicy Kick: Add extra red pepper flakes or hot sauce for more heat.
- Vegetarian Option: Swap chicken and shrimp for tofu or tempeh.
- Different Pasta: Use penne, fettuccine, or any pasta of choice.
- Cheese Variety: Try gouda, mozzarella, or pepper jack cheese for a different flavor.
