Description

Ingredients

For the Soup:

4 slices turkey sausage, diced

1 tbsp unsalted butter

1 yellow onion, diced

2 ribs celery, diced

2 cloves garlic, minced

6 cups low-sodium chicken broth

2 tbsp ranch seasoning mix

½ tsp ground black pepper

4 cups cooked shredded chicken

8 oz cream cheese, cubed

1 cup freshly shredded cheddar cheese

3 cups chopped baby spinach

⅓ cup heavy cream

Fresh parsley (optional, for garnish)


Instructions

  • Cook the Sausage: In a large Dutch oven, cook the diced turkey sausage until crispy. Set aside on a paper towel-lined plate.

  • Sauté Vegetables: Add butter to the pot, then sauté the diced onion, celery, and minced garlic until softened (about 5-7 minutes).

  • Simmer Soup: Stir in the chicken broth, ranch seasoning mix, black pepper, and cooked shredded chicken. Simmer for 5 minutes until the chicken is heated through.

  • Make it Creamy: Add the cubed cream cheese and shredded cheddar cheese, stirring until fully melted and the soup is smooth.

  • Add Spinach & Cream: Stir in the chopped spinach and cook until wilted (2-3 minutes). Add the heavy cream and heat until the soup is warmed through.

  • Serve: Ladle into bowls, garnish with the cooked sausage, additional shredded cheese, and fresh parsley. Serve hot.


Notes

Add Noodles: For a heartier soup, you can add egg noodles to make it even more filling.
