Ingredients
1 lb lean ground beef
1 cup breadcrumbs
2 large eggs
4 medium russet potatoes, thinly sliced
1 medium onion, finely chopped
1/2 cup ketchup
1 tsp garlic powder
1 tsp paprika
Salt and pepper, to taste
1 cup shredded sharp cheddar cheese (for topping)
Instructions
- Preheat oven to 375°F (190°C) and grease a large baking dish with cooking spray.
- In a large bowl, combine ground beef, breadcrumbs, eggs, onion, ketchup, garlic powder, paprika, salt, and pepper. Mix until fully incorporated.
- Layer half of the sliced potatoes evenly in the bottom of the baking dish.
- Spread the meatloaf mixture evenly over the potatoes.
- Top with the remaining potato slices.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for 15 minutes more, until potatoes are tender and cheese is melted and bubbly.
- Let rest for 10 minutes before slicing and serving.
