Description

A quick and comforting copycat Arby’s roast beef sandwich made with tender deli roast beef warmed in broth, creamy homemade cheddar sauce, and a tangy Arby’s-style sauce served on soft onion buns.

Ingredients

2/3 cup ketchup

1 tablespoon apple cider vinegar

2 teaspoons mayonnaise

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon salt

1 tablespoon unsalted butter

1 tablespoon all-purpose flour

3/4 cup milk

3/4 cup sharp cheddar cheese, shredded

1/4 teaspoon salt (for cheese sauce)

1 pound thinly sliced deli roast beef

1 cup beef broth

4 onion buns

Instructions

  1. In a small bowl, whisk together ketchup, apple cider vinegar, mayonnaise, garlic powder, onion powder, paprika, and salt until smooth. Set aside.
  2. In a small saucepan over medium heat, melt the butter. Stir in the flour and cook for 1 minute.
  3. Slowly whisk in the milk, then add shredded cheddar cheese and salt. Stir until the sauce is smooth and creamy. Remove from heat.
  4. Heat beef broth in a large skillet over medium-low heat until it begins to simmer.
  5. Separate the roast beef slices and add them to the skillet. Heat gently for about 2 minutes, then remove from heat.
  6. Spread Arby’s sauce on the bottom half of each onion bun.
  7. Pile warm roast beef onto the buns and spoon cheddar sauce over the top.
  8. Cover with the top buns and serve immediately.

Notes

Heat roast beef gently to prevent it from drying out.

Keep cheese sauce on low heat and stir often to stay smooth.

Toast buns lightly for added texture.

Store leftover components separately for best results.
