Ingredients

1 can (14 oz) coconut milk
2 cups fish or chicken broth
3 tablespoons lime juice
1 tablespoon fish sauce
1 teaspoon sugar

1/4 cup fresh cilantro, chopped

Instructions
- Sauté the Vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5-6 minutes.
- Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Cook the Bell Pepper: Add the red bell pepper to the pot and cook for an additional 3-4 minutes until softened.
- Add Liquids and Seasoning: Pour in the coconut milk and broth, stirring to combine. Bring the mixture to a simmer, then add the lime juice, fish sauce, and sugar. Season with salt and pepper to taste.
- Cook the Fish: Gently add the fish pieces to the soup and simmer for 5-7 minutes, or until the fish is cooked through.
- Finish the Soup: Remove the pot from heat and stir in the fresh cilantro. Serve the soup hot, garnished with lime wedges.
Notes
For a vegetarian version, replace the fish with tofu or mushrooms and use vegetable broth.
To make the soup spicier, add Thai chili peppers, red curry paste, or a dash of hot sauce.
For a thicker consistency, reduce the broth or simmer the soup longer.
If using frozen fish, ensure it’s thawed properly before adding it to the soup for best texture.
