Ingredients

  • 3 ¼ to 3 ¾ cups all-purpose flour
  • 2 envelopes (4 ½ tsp) rapid rise yeast
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 1 cup + 2 tbsp milk
  • ¼ cup butter
  • 3 egg yolks
  • Vegetable oil (for deep frying)
  • ½ cup strawberry jam (or preferred jelly)

Instructions

Step 1: Make the Dough

  1. In a large bowl, combine 2 cups flour, yeast, sugar, and salt.
  2. Heat milk and butter in a saucepan until warm (120°F-130°F). Add to the flour mixture along with egg yolks.
  3. Beat for 2 minutes on low speed using a stand mixer.
  4. Gradually add more flour, ¼ cup at a time, until a soft dough forms.
  5. Knead on a lightly floured surface for 4-6 minutes until smooth and elastic. Cover and let rest for 10 minutes.

Step 2: Shape the Donuts

  1. Roll dough into a 12-inch circle, about ½-inch thick.
  2. Cut out 3-inch rounds using a cookie cutter and place them on a greased or parchment-lined baking sheet.
  3. Cover and let rise for 45 minutes to 1 hour.

Step 3: Fry the Donuts

  1. Heat at least 2 inches of oil in a deep pan to 350°F.
  2. Fry 2-3 donuts at a time, turning occasionally, until golden brown (about 2-3 minutes).
  3. Drain on paper towels.

Step 4: Coat and Fill

  1. Toss warm donuts in granulated sugar to coat.
