Description

Ingredients

For the Shrimp:

1 lb shrimp, peeled and deveined

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

2 tablespoons honey

Juice and zest of 1 lime

1 bunch fresh cilantro (divided)

For the Slaw:

1 cup shredded green cabbage

1/2 cup plain Greek yogurt

Lime juice, salt, and pepper to taste

For the Toppings:

1 avocado, sliced

Tortillas (corn, flour, or blend)

Extra lime wedges for serving


Instructions

  • Prepare the Shrimp:
    Season the shrimp with smoked paprika, garlic powder, chili powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook the shrimp until pink, about 2-3 minutes per side.

  • Make the Sauce:
    Once the shrimp is cooked, add butter, honey, lime juice, and zest to the pan. Stir to coat the shrimp in the sauce and cook for another minute.

  • Make the Slaw:
    In a bowl, mix shredded cabbage with Greek yogurt and chopped cilantro. Season with lime juice, salt, and pepper to taste.
