Description

Cilantro Lime Noodles are a light, zesty, and refreshing dish combining fresh herbs, citrus, and a hint of spice. Perfect served warm or chilled, this vegan-friendly recipe is quick to prepare, adaptable, and bursting with flavor.


Ingredients

8 oz noodles (e.g., rice noodles or spaghetti)

1 cup fresh cilantro, chopped

3 tablespoons lime juice (about 2 limes)

1 tablespoon lime zest

2 tablespoons olive oil

12 cloves garlic, minced

1 teaspoon honey (or agave syrup for vegan option)

1 teaspoon soy sauce or tamari (for gluten-free option)

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Optional toppings: sliced green onions, toasted sesame seeds, crushed peanuts


Instructions

  1. Bring a large pot of salted water to a boil. Add noodles and cook according to package instructions until al dente. Drain and rinse under cold water. Set aside.
  2. In a small bowl, whisk together lime juice, lime zest, olive oil, minced garlic, honey (or agave), soy sauce (or tamari), red pepper flakes, salt, and pepper.
  3. In a large bowl, combine the cooked noodles with the cilantro-lime sauce. Toss gently to coat evenly.
  4. Serve immediately for a warm dish or refrigerate for 15–20 minutes to serve chilled.
