Ingredients
375 g chocolate (sweet dark or preferred type)
3 tbsp creamy peanut butter
160 g plain white flour
250 g white caster sugar
½ tsp salt
120 g unsalted butter
1½ tbsp vanilla extract
120 ml soy milk
60 g cocoa powder
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper for easy removal.
- In a heatproof bowl, melt the chocolate and butter together until smooth, using a double boiler or microwave in 30-second bursts. Stir in the creamy peanut butter until fully combined.
- In a separate bowl, whisk together the sugar, flour, cocoa powder, and salt until evenly mixed.
- Pour vanilla extract and soy milk into the melted chocolate mixture and stir until smooth.
- Add the wet mixture to the dry ingredients and gently fold until just combined—do not overmix.
- Pour the thick batter into the prepared pan and smooth the top evenly.
- Bake for 25–30 minutes, until the edges are set but the center remains slightly gooey.
- Let the brownies cool completely in the pan before slicing into squares. Enjoy as-is or warm with a scoop of ice cream.
