Ingredients
- ¼ cup light corn syrup
- ¼ cup softened butter
- 1 teaspoon mint extract
- ⅛ teaspoon salt
- A few drops of green food coloring (optional)
- 4 cups powdered sugar
- 12 ounces chocolate candy coating
Instructions
- Make the Mint Filling: In a medium bowl, mix corn syrup, softened butter, mint extract, salt, and green food coloring until smooth.
- Add Powdered Sugar: Gradually mix in powdered sugar until a stiff dough forms. Knead the mixture until it’s smooth and no longer sticky.
- Shape the Patties: Roll the dough into 1-inch balls, place them on a wax paper-lined baking sheet, and flatten them into discs.
- Chill: Cover with wax paper and refrigerate for 60–90 minutes until firm.
- Coat with Chocolate: Melt the chocolate candy coating according to package instructions. Using a fork, dip each chilled patty in the melted chocolate, letting excess drip off.
- Set the Chocolate: Place the coated patties back on the wax paper and let them set at room temperature or in the refrigerator until the chocolate hardens.
Notes
- Alternative sweeteners: Substitute corn syrup with honey or agave, but expect slight texture changes.
- Dipping tip: Use a fork or dipping tool for an even chocolate coating.
- Storage tip: Store in an airtight container with wax paper layers to prevent sticking.
