Description

Ingredients

1 pound large shrimp, peeled and deveined

2 ripe peaches, diced

1 tablespoon olive oil

½ cup heavy cream

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon grated ginger

1 garlic clove, minced

Salt and pepper to taste

Green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Cooked rice or quinoa (for serving)


Instructions

  1. Rinse the shrimp under cold water and pat dry with a paper towel. Season lightly with salt and pepper.
  2. In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  3. In the same skillet, add the minced garlic and grated ginger. Sauté for 1 minute until fragrant, ensuring the garlic doesn’t burn.
  4. Gently fold in the diced peaches and cook for 2-3 minutes, allowing them to soften and become slightly caramelized.
  5. Pour in the heavy cream, soy sauce, and honey, stirring well to combine. Let the mixture simmer for about 2-3 minutes, allowing the sauce to thicken slightly.
  6. Return the cooked shrimp to the skillet and stir gently to coat them in the creamy sauce.
  7. Let everything simmer together for another 2-3 minutes to allow the flavors to meld and the sauce to thicken further.
  8. Taste and adjust the seasoning with salt and pepper according to your preference.
  9. Remove from heat and garnish with chopped green onions and sesame seeds (optional). Serve the shrimp hot over a bed of rice, quinoa, or noodles to soak up the delicious sauce.

Notes

Add red pepper flakes or chopped chili pepper to make it spicier.
