Ingredients
1 pound large shrimp, peeled and deveined
2 ripe peaches, diced
1 tablespoon olive oil
½ cup heavy cream
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon grated ginger
1 garlic clove, minced

Instructions
- Rinse the shrimp under cold water and pat dry with a paper towel. Season lightly with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
- In the same skillet, add the minced garlic and grated ginger. Sauté for 1 minute until fragrant, ensuring the garlic doesn’t burn.
- Gently fold in the diced peaches and cook for 2-3 minutes, allowing them to soften and become slightly caramelized.
- Pour in the heavy cream, soy sauce, and honey, stirring well to combine. Let the mixture simmer for about 2-3 minutes, allowing the sauce to thicken slightly.
- Return the cooked shrimp to the skillet and stir gently to coat them in the creamy sauce.
- Let everything simmer together for another 2-3 minutes to allow the flavors to meld and the sauce to thicken further.
- Taste and adjust the seasoning with salt and pepper according to your preference.
- Remove from heat and garnish with chopped green onions and sesame seeds (optional). Serve the shrimp hot over a bed of rice, quinoa, or noodles to soak up the delicious sauce.
