Description

Ingredients

4 ripe nectarines (about 600g), pitted and chopped

1 cup plain Greek yogurt (240g)

1/4 cup fresh mint leaves (15g), plus extra for garnish

2 tbsp freshly squeezed lemon juice (30ml)

2 tbsp honey or agave syrup (30ml)


Instructions

  1. Prepare the Ingredients: Wash the nectarines thoroughly, remove the pits, and chop them into small pieces.
  2. Blend the Soup: In a blender, combine the chopped nectarines, Greek yogurt, fresh mint leaves (reserve some for garnish), lemon juice, and honey or agave syrup. Blend until smooth and creamy.
