Description
Chilled Nectarine Soup is a delightful and refreshing dessert that combines the sweet and tangy flavors of ripe nectarines with creamy Greek yogurt, fresh mint, and a hint of lemon juice. It’s perfect for hot summer days and easy to prepare in just a few simple steps.
Ingredients
4 ripe nectarines (about 600g), pitted and chopped
1 cup plain Greek yogurt (240g)
1/4 cup fresh mint leaves (15g), plus extra for garnish
2 tbsp freshly squeezed lemon juice (30ml)
2 tbsp honey or agave syrup (30ml)
Instructions
- Prepare the Ingredients: Wash the nectarines thoroughly, remove the pits, and chop them into small pieces.
- Blend the Soup: In a blender, combine the chopped nectarines, Greek yogurt, fresh mint leaves (reserve some for garnish), lemon juice, and honey or agave syrup. Blend until smooth and creamy.
- Chill: Transfer the mixture to an airtight container and refrigerate for at least one hour to chill. This allows the flavors to meld and the soup to become cool and refreshing.
- Serve: Before serving, give the soup a quick blend if needed to smooth it out. Pour into bowls and garnish with fresh mint leaves for a beautiful touch.
Notes
Try mixing in other fruits like peaches or berries for a refreshing fruit medley.
For a spicy twist, add cayenne pepper or fresh ginger to the soup.
For a dairy-free version, use coconut yogurt or another non-dairy alternative.
