Description

The Chicken Salad Stuffed Avocado combines creamy, flavorful chicken salad with the smooth, rich texture of fresh avocado. It’s a quick, nutritious, and visually stunning dish perfect for lunch, light dinner, or appetizers.

Ingredients

2 ripe avocados

2 cups cooked chicken (shredded or diced)

½ cup Greek yogurt or mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 celery stalk (diced)

¼ cup red onion (diced)

¼ cup fresh cilantro (chopped)

Salt and pepper (to taste)

Optional: ¼ cup grapes or apples (diced for sweetness)

Instructions

  1. Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out a little flesh to create room for the chicken salad. Set the avocado halves aside.
  2. Mix the Chicken Salad: In a large bowl, combine the shredded chicken, Greek yogurt or mayonnaise, Dijon mustard, and apple cider vinegar. Mix well until combined.
  3. Add Vegetables: Stir in the diced celery, red onion, and cilantro. Season with salt and pepper. If desired, add diced grapes or apples for sweetness.
  4. Stuff the Avocados: Spoon the chicken salad mixture into each avocado half, filling them to the top.
  5. Garnish: Optionally, top with extra cilantro or a sprinkle of paprika for color and flavor.
  6. Serve: Enjoy immediately or chill for a bit before serving.

Notes

To prevent browning, drizzle lemon or lime juice on the exposed avocado flesh before stuffing.

For a heartier meal, add grilled chicken or turkey slices.

Store leftovers in an airtight container in the fridge for up to 2 days, but keep the avocado halves separate.
