Ingredients
2 ripe avocados
2 cups cooked chicken (shredded or diced)
½ cup Greek yogurt or mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 celery stalk (diced)
¼ cup red onion (diced)
¼ cup fresh cilantro (chopped)
Salt and pepper (to taste)
Optional: ¼ cup grapes or apples (diced for sweetness)
Instructions
- Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop out a little flesh to create room for the chicken salad. Set the avocado halves aside.
- Mix the Chicken Salad: In a large bowl, combine the shredded chicken, Greek yogurt or mayonnaise, Dijon mustard, and apple cider vinegar. Mix well until combined.
