Description
A bright and refreshing chicken salad made with tender shredded chicken, sweet grapes, juicy mandarin oranges, crunchy almonds, and a creamy seasoned dressing. Perfect for sandwiches, wraps, or serving over crisp lettuce.
Ingredients
3 cups shredded rotisserie chicken
1 cup celery, diced small
2 tablespoons fresh lemon juice (about 1/2 lemon)
1 teaspoon onion powder
3/4 teaspoon kosher salt
3/4 teaspoon Montreal steak seasoning
1 1/2 cups red grapes, halved
1 (15-oz) can mandarin oranges, drained
1/2 cup slivered almonds
1/2 cup mayonnaise
6 large croissants (or 8–10 mini croissants), for serving
Instructions
- Shred the rotisserie chicken and dice the celery finely.
- In a large bowl, combine chicken, celery, lemon juice, onion powder, salt, and Montreal steak seasoning. Mix well, cover, and refrigerate for at least 2 hours or overnight.
- Add grapes, mandarin oranges, almonds, and mayonnaise to the chilled chicken mixture. Stir gently to combine.
- Serve the chicken salad on split croissants, in wraps, or over fresh lettuce.
Notes
Add diced apples for extra crunch.
Swap almonds for pecans or walnuts.
Stir in a little Greek yogurt for a lighter dressing.
Add fresh dill, parsley, or chives for herbal brightness.
Toss in dried cranberries for extra sweetness.
