Description

These Chicken Puff Pastry Bites are a savory, flaky appetizer filled with seasoned ground chicken, aromatic spices, and a creamy, cheesy interior. Wrapped in golden, buttery puff pastry, they’re the perfect treat for any gathering. With a combination of cumin, coriander, and cayenne pepper, along with the richness of cheese, these bite-sized snacks are sure to impress at your next party or game day!


Ingredients

1 pound ground chicken

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon cayenne pepper (or paprika)

½ teaspoon salt

⅛ teaspoon black pepper

1 medium onion, chopped

12 cloves garlic, chopped

1 tablespoon oil

1 egg (for egg wash)

1215 puff pastry squares (or puff pastry sheets cut into squares)


Instructions

  • Prepare the Chicken Filling:
    In a bowl, mix ground chicken with cumin, coriander, cayenne pepper (or paprika), salt, and black pepper. Set aside.

  • Cook the Onions and Garlic:
    Heat oil in a skillet over medium heat. Add chopped onion and sauté until soft. Add garlic and cook for 1-2 minutes, then remove from heat.

  • Cook the Chicken:
    Add seasoned ground chicken to the skillet, breaking it up with spatulas. Cook until fully cooked and crumbly. Set aside to cool.

  • Prepare the Pastry:
    Preheat oven to 356°F (180°C). Crack an egg into a small bowl and scramble it for the egg wash. Roll puff pastry into squares and brush edges with egg wash.

  • Assemble the Bites:
    Spoon chicken filling onto pastry squares, fold the pastry to form triangles, and seal edges by crimping or twisting. Place on a parchment-lined baking sheet and brush the tops with egg wash.

  • Bake:
    Bake for 15-20 minutes or until golden and crispy.


Notes

To add some heat, increase cayenne pepper or add diced jalapeños.

Add cheese (cheddar or mozzarella) to the filling for a cheesy twist.

For a vegetarian version, use crumbled tofu or cooked veggies instead of chicken.
