Ingredients
4 boneless, skinless chicken breasts
1 cup mushrooms, sliced
1 cup shredded mozzarella cheese
1 cup heavy cream
½ cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sauté garlic and mushrooms until tender.
- Place chicken breasts in the baking dish and pour heavy cream evenly over them.
- Top each chicken breast with sautéed mushrooms, then sprinkle mozzarella and Parmesan cheese on top.
- Bake for 25-30 minutes or until the chicken is cooked through and the cheese is golden and bubbly.
- Garnish with chopped parsley and serve hot.
Notes
Add fresh spinach or sun-dried tomatoes to the mushroom sauté for extra flavor and color.
