Description

Chicken Bhuna is a rich, flavorful Indian curry made with tender chicken cooked in a spiced tomato-based sauce. Infused with aromatic spices like cumin, coriander, and garam masala, this dish is perfect for a comforting meal served with rice or roti.


Ingredients

6 boneless, skinless chicken thighs, diced into 1-inch chunks

4 cloves garlic, peeled and chopped

1 green chili, deseeded and chopped

2 tbsp fresh ginger, chopped

2 onions, diced

1 tsp turmeric powder

2 tsp chili powder

2 tsp ground cumin

2 tsp ground coriander

1 tsp garam masala

5 tomatoes, chopped

1/2 tsp lemon juice

1 tbsp fresh coriander, chopped

3 tbsp vegetable oil

Salt, to taste

100 ml water


Instructions

  1. Heat the oil in a large, deep frying pan or wok over medium heat. Add the garlic, green chili, and ginger, cooking for 1 minute until fragrant. Add the diced onions and cook for 3-4 minutes until golden brown.
  2. Stir in the turmeric, chili powder, ground cumin, ground coriander, and garam masala. Cook for 1 more minute to release the flavors.
  3. Add the chopped tomatoes and water to the pan, along with a pinch of salt. Stir well, cover, and bring to a boil. Simmer until the sauce thickens, stirring occasionally.
  4. Stir in the diced chicken pieces, coat them well with the sauce, and cook over medium heat for 20 minutes or until the chicken is tender and fully cooked.
  5. Finish by adding the lemon juice, then garnish with chopped coriander before serving.

Notes

For a vegetarian version, replace chicken with paneer, tofu, or vegetables like potatoes or cauliflower.

Adjust the spice level by adding more or less chili powder and green chilies.

For a creamier version, add a splash of coconut milk or a tablespoon of yogurt at the end of cooking.

This dish is naturally gluten-free. Just ensure your spices and ingredients are gluten-free.

Feel free to add extra vegetables such as peas, bell peppers, or spinach to make it heartier.
