Description

Ingredients

1/2 cup unsalted butter, softened

1/2 cup light brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dried tart cherries

1/2 cup semi-sweet chocolate chips

1/2 cup mocha chocolate chips (or espresso chips)


Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
  4. Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the Mix-ins: Fold in the dried cherries, semi-sweet chocolate chips, and mocha chips evenly.
  7. Shape the Dough: Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake the Cookies: Bake for 10–12 minutes, or until the edges are golden brown and the centers are still slightly soft.
  9. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Fresh cherries can be used, but dried cherries are preferred for their chewy texture and concentrated tartness.

For a different flavor, substitute semi-sweet and mocha chips with milk chocolate, dark chocolate, or white chocolate.

If you don’t have mocha chips, you can substitute them with chocolate chips or espresso powder for a similar coffee flavor.

Make the dough ahead of time and refrigerate it for up to 3 days, or freeze the dough for up to 2-3 months.

Chopped nuts like walnuts or pecans can complement the flavor and texture of these cookies.
